The recipe gets the credit, but temperature does a lot of the work. The same wort fermented at 64°F and 74°F becomes two different beers. This is the by-style reference, and why holding the number matters as much as picking it.

Why temperature is the flavor dial

Yeast produces different compounds at different temperatures. Push ale yeast too warm and you get fusel alcohols — hot, solventy, headache-inducing — and harsh esters. Run it too cold and it stalls before attenuating, leaving sweet, underfermented beer. The clean, balanced result everyone wants lives in a fairly narrow band, and that band is different for every yeast. This is why "pitch and forget" produces inconsistent beer: the yeast is following the temperature, and if the temperature wanders, so does the flavor.

The vessel runs hotter than the room

Here is the mistake that quietly ruins ferments: setting the controller to the room. Active fermentation is exothermic — a vigorous batch commonly runs 5–10°F above ambient at its peak. Set your fridge to 66°F and the beer inside might be fermenting at 72°F during the most active, most flavor-defining days. Measure the liquid (or the vessel wall) and control to that, or the yeast spends its critical phase too warm.

Holding the band

Once you know the target, holding it means a probe on the fermenter, a per-batch band, and a heater or cooler driven to stay inside it. Frequently asked questions

It depends on the yeast. Clean ale strains ferment best around 65–68°F, where they stay clean without stalling. Lager yeast wants 48–55°F for a slow, clean ferment. Saison and many Belgian strains are deliberately run warm, 75–85°F, to finish dry and throw their characteristic esters and phenols. Always check your specific yeast supplier's range — these are starting points.
